A must-have side dish for Thanksgiving dinner, it is the perfect recipe for the holidays. In 1955 a Campbell’s Soup Company employee, Dorcas Reilly successfully created the iconic Green Bean Casserole. The mixture of canned soup, green beans, and fried onions has graced holiday tables ever since. It is made with minimal ingredients that many people already have on hand. The ingredients can often be found on sale around the holidays.
For the green beans, you can use approximately 1½ to 2 pounds of fresh green beans (cooked). Two cans (14.5 ounces each) of green beans or French-style green beans (drained). Or 16 to 20 ounces of frozen green beans (thawed). You can replace the Cream of Mushroom soup with almost any cream soup concentrate. Cream of Celery, Cream of Chicken, and Cream of Mushroom with roasted garlic are all good replacements. With the addition of cheese to the mixture and no milk or other liquid, keep this casserole thick, no runny casseroles with this recipe.
It can easily be made a day or two ahead and baked the day you need it. You can even make it a week or two in advance and freeze it until needed. Don’t bake before freezing. Cover the casserole with a layer of plastic wrap and then a layer of foil before placing it in the freezer. The day before you want to bake it, move it from the freezer to the fridge to thaw. Two hours before baking, take it out and set it on the counter (keep covered), and allow it to come to room temperature. Bake uncovered for 25 minutes, sprinkle on the remaining French Fried Onions, and return to the oven for 5-10 minutes until the onions are browned.
