Pulled Pork Patties with a Crispy Pork Rind Crust

If you ever find yourself with leftover pulled pork and no desire to eat the same meal twice, these Pulled Pork Patties are the perfect solution. They’re crispy on the outside, creamy and flavorful on the inside, and an easy way to turn leftovers into something completely new. Made with cream cheese and coated in a crunchy pork rind crust, these patties are hearty, satisfying, and naturally low-carb.

The cream cheese adds moisture and richness, keeping the patties tender while helping everything hold together. Diced onion brings just enough bite, and the pork rind coating delivers that golden, crunchy crust without using traditional breadcrumbs. If you’re not low-carb, panko crumbs work just as well, making this recipe flexible for different diets.

Ingredients

  • 4 cups leftover pulled pork
  • 8 oz cream cheese, softened
  • ½ cup diced onion
  • Garlic pepper (or your favorite seasoning blend), to taste
  • ½–1 cup almond flour (for coating)
  • 2 large eggs
  • 1–2 cups finely ground pork rinds (or panko crumbs, if not low-carb)
  • Oil for frying (enough for about a ¼-inch depth in the skillet)

Instructions

Step 1: Prepare the Pork Mixture
In a large mixing bowl, combine the pulled pork, softened cream cheese, diced onion, and garlic pepper. Mix thoroughly until everything is well incorporated. The mixture should be thick and easy to shape.

Step 2: Set Up the Breading Station
You’ll need three shallow bowls:

  1. Almond flour in the first bowl

  2. Whisked eggs in the second bowl

  3. Ground pork rinds in the third bowl

This three-step process ensures a crispy, golden crust.

Step 3: Form the Patties
Divide the pork mixture into 8 equal portions. Roll each portion into a ball, then gently flatten into patties about ½–¾ inch thick.

Step 4: Bread the Patties

  • Coat each patty lightly in almond flour (both sides).

  • Dip into the whisked eggs, making sure it’s fully covered.

  • Press into the ground pork rinds, coating evenly and gently pressing to adhere.

Step 5: Fry Until Golden and Crispy
Heat about ¼ inch of oil in a large skillet over medium heat. Once hot, add patties in batches (do not overcrowd).

Cook for 2–3 minutes per side, or until golden brown and heated through. Adjust the heat as needed to prevent burning.

Transfer cooked patties to a paper towel-lined plate while finishing the remaining batches.

Serving Suggestions

Serve warm with:

  • BBQ sauce
  • Ranch dressing
  • Honey mustard
  • Salsa

  • You will need 3 shallow bowls for the breading process. Almond flour in one bowl (you can add more as needed). Whisk the 2 eggs in the second. Place the ground pork rinds in the third bowl.
  • Roll the pork into 8-10 balls, and flatten slightly to create a patty. Dip the patty in the almond flour on both sides to coat. Then dip in whisked eggs and then into the ground pork rinds.
  • Heat ¼" oil, beef tallow, or bacon greese in a large skillet, add the pork patties to the hot oil in batches, don't overcrowd them. Cook for 2-3 minutes per side until golden brown and heated through. Remove to a paper towel-lined plate while cooking the rest.
  • Serve with BBQ sauce, ranch, honey mustard, salsa, or your choice of dipping sauce or toppings.
