Raspberry Lemon Bars
These Raspberry Lemon Bars are one of those easy dessert recipes that look like they took a lot more effort than they actually did. Starting with a boxed cake mix creates a buttery, soft crust, while a creamy lemon filling and juicy raspberries add the perfect balance of sweet and tangy flavor. Whether you’re making dessert for a family gathering, potluck, picnic, or holiday celebration, these bars are always a crowd favorite.
The best part? You’ll only need a handful of simple ingredients and about 10 minutes of prep time before the oven does the rest of the work.
Why You’ll Love This Recipe
- Only 5 simple ingredients
- Quick and easy to prepare
- Sweet, tart, and creamy
- Perfect for spring and summer gatherings
- Great make-ahead dessert
- Easy to customize with other berries
Ingredients
- 1 package white or yellow cake mix
- ½ cup (1 stick) butter, softened
- 1 large egg
- 1 (14-ounce) can sweetened condensed milk
- ¼ cup fresh lemon juice
- 2 cups fresh raspberries
How to Make Raspberry Lemon Bars
Step 1: Prepare the Pan
Preheat your oven to 350°F. Lightly grease a 9×13-inch baking dish or line it with parchment paper for easier cleanup.
Step 2: Make the Crust
In a large bowl, combine:
- Cake mix
- Softened butter
- Egg
Mix until everything is well combined. The mixture will be thick and resemble cookie dough.
Press the mixture evenly into the bottom of the prepared baking pan. If it’s too sticky, coat your hands with flour.
Step 3: Make the Lemon Filling
In a separate bowl, whisk together:
- Sweetened condensed milk
- Lemon juice
Once smooth, gently fold in the raspberries. Try not to overmix so the berries stay mostly intact. Save a few whole raspberries to throw on top.
Step 4: Assemble
Pour the lemon and raspberry mixture evenly over the crust.

Step 5: Bake
Bake for 45 to 55 minutes, or until the edges are lightly golden and the center is mostly set. One to two inches in the center should still be slightly jiggly.
The filling will continue to firm up as it cools.
Step 6: Cool
Allow the bars to cool completely at room temperature and then place in the refrigerator. For the cleanest slices, refrigerate for at least one hour before cutting.
Cut into bars and serve.
Tips for the Best Raspberry Lemon Bars
- Fresh lemon juice provides the brightest flavor, but bottled lemon juice works in a pinch.
- Don’t overbake. The center should have just a slight jiggle when removed from the oven.
- Chill before slicing for cleaner edges.
- Use parchment paper with overhanging edges to easily lift the bars out of the pan.
- Dust with powdered sugar just before serving for a bakery-style finish.
Recipe Variations
Use Frozen Raspberries
Frozen raspberries work well. Add them directly from frozen without thawing to help prevent excess moisture.
Try Different Berries
Swap the raspberries for:
- Blueberries
- Blackberries
- Mixed berries
- Chopped strawberries
Make It Extra Lemony
Add 1 teaspoon of fresh lemon zest to the filling for even more citrus flavor.
White Chocolate Twist
Sprinkle white chocolate chips over the raspberry layer before baking for a rich, creamy addition.
Storage
Store leftover Raspberry Lemon Bars in an airtight container in the refrigerator for up to 5 days.
Because of the sweetened condensed milk filling, refrigeration is recommended.
Can You Freeze Raspberry Lemon Bars?
Yes!
Once completely cooled:
- Slice into individual bars.
- Wrap each bar in plastic wrap.
- Place them in a freezer-safe container or freezer bag.
Freeze for up to 3 months.
Thaw overnight in the refrigerator before serving.

Frequently Asked Questions
Can I use a different flavor cake mix?
Yes! White or yellow cake mixes are traditional flavors that work well. But lemon, butter, vanilla, strawberry, or even a confetti cake mix can be used.
Can I use frozen raspberries?
Absolutely. Use them straight from the freezer without thawing to minimize extra moisture.
Do I have to refrigerate these bars?
Yes. Since the filling contains sweetened condensed milk, it’s best to store them in the refrigerator after they’ve cooled.
Can I make these ahead of time?
Yes! These bars actually taste even better after they’ve chilled for several hours, making them an excellent make-ahead dessert.
Can I add lemon zest?
Definitely, one teaspoon of freshly grated lemon zest adds even more bright lemon flavor.
Why are my bars still soft?
The bars will continue to set as they cool. For the firmest texture, refrigerate them for at least one hour before slicing.
