Rotel Chicken Bake
If you’re looking for an easy chicken dinner that doesn’t require a lot of ingredients or prep work, this Rotel Chicken Bake is a great recipe to add to your meal plan. Made with boneless chicken breasts, taco seasoning, Rotel tomatoes with green chilies, and shredded Cheddar cheese, it’s a simple dinner with plenty of flavor.
I love recipes that use ingredients I already have in the pantry, especially on busy weeknights when I don’t want to spend a lot of time in the kitchen. This baked chicken recipe comes together in just a few minutes, and the oven does most of the work.
The tomatoes and green chilies add a little kick to the chicken, while the melted Cheddar cheese makes it even better. Serve it with rice, roasted vegetables, or a simple salad for an easy family dinner.
Why You’ll Love This Rotel Chicken Recipe
- Easy to prepare: You only need a few minutes to season the chicken and add the toppings before putting it in the oven.
- Simple ingredients: Chicken breasts, taco seasoning, Rotel, and Cheddar cheese are all you need.
- Easy to customize: Use your favorite salsa instead of Rotel, adjust the spice level, or try a different shredded cheese.
- Great for busy weeknights: This is an easy main dish to make when you want something flavorful without a complicated recipe.
Ingredients
- 4 skinless, boneless chicken breast halves: Boneless chicken breasts work well because they’re easy to serve and pair nicely with the tomatoes and cheese. Try to use chicken breasts that are similar in size so they cook evenly, or cut them up into chunks before coating them with taco seasoning.
- 1 packet taco seasoning mix (or 2 teaspoons homemade taco seasoning): Taco seasoning adds plenty of flavor without needing a long list of spices. You can use my Homemade Taco Seasoning Mix if you prefer to make your own.
- 1 can Rotel (tomatoes with green chilies) or salsa: Rotel adds tomatoes and a little heat. If you prefer, use your favorite salsa instead. The original recipe I used to make this called for Salsa, but I prefer the flavor of Rotel.
- 1 cup shredded Cheddar cheese: Cheddar melts over the chicken and adds a delicious cheesy topping.

How to Make Rotel Chicken Bake
Step 1: Prepare the Chicken
Preheat your oven to 375°F. Lightly grease a 9×13-inch baking dish.
Sprinkle taco seasoning over both sides of the chicken, ensuring each piece is evenly coated.
(Over the years, I have made a few personal preference changes to the original recipe.
I cut each chicken breast into about 4 chunks. Place the chicken pieces in a gallon-sized Ziploc bag, add the taco seasoning, and seal the bag. Shake and mix everything together until the chicken is evenly coated with the seasoning. )
Spread the seasoned chicken pieces evenly in the prepared baking dish, arranging them in a single layer.
Step 2: Add the Rotel
Pour the can of Rotel tomatoes and green chilies over the chicken breasts. If you’re using salsa instead, spread it evenly over the top.
The tomatoes help add moisture and flavor as the chicken bakes.
Step 3: Bake the Chicken
Place the baking dish in the preheated oven and bake for 25 to 35 minutes, depending on the chicken breasts’ thickness.
Chicken should reach an internal temperature of 165°F in the thickest part. A meat thermometer is the easiest way to check that the chicken is safely cooked without overbaking it.
Step 4: Add the Cheese
Sprinkle the shredded Cheddar cheese evenly over the chicken.
Return the dish to the oven and bake for another 3 to 5 minutes, or until the cheese is melted and bubbly.
Let the chicken rest for a few minutes before serving. Spoon some of the tomatoes and juices from the baking dish over the chicken for even more flavor.
Tips for Making the Best Rotel Chicken Bake
Choose chicken breasts that are similar in size. This helps them cook more evenly. If your chicken breasts are especially thick, they may need additional time in the oven.
Cut the chicken into chunks. Instead of baking the chicken breasts whole, I cut each breast into about 4 pieces. I find it easier to coat the chicken evenly with taco seasoning this way. Mixing the chicken and seasoning together in a gallon-sized Ziploc bag also makes preparation quick and easy.
Use a meat thermometer. Chicken breasts can dry out if they’re overcooked. Check the thickest part of each breast and remove the chicken from the oven when it reaches 165°F.
Adjust the spice level. Original Rotel adds a little heat, while hotter varieties bring more of a kick. For a milder dinner, use mild salsa or mild tomatoes with green chilies.
Shred your own cheese. Pre-shredded Cheddar works just fine, but freshly shredded cheese often melts more smoothly.
Don’t skip the resting time. Letting the chicken rest for a few minutes before serving helps keep it juicy.
What to Serve With Rotel Chicken Bake
This cheesy chicken recipe pairs well with a variety of easy side dishes. Here are a few ideas for putting together a complete meal.
- Rice: White rice, brown rice, or cilantro-lime rice works well with the flavorful tomato juices.
- Roasted vegetables: Serve the chicken with roasted broccoli, zucchini, or cauliflower.
- Mexican-style sides: Black beans, refried beans, or corn make great additions.
- A fresh salad: A simple green salad with your favorite dressing balances the richness of the cheese.
- Cauliflower rice: If you’re watching your carbohydrates, cauliflower rice is an easy alternative to regular rice.
You can also serve the chicken sliced over a bed of lettuce with avocado and a dollop of sour cream for a taco-inspired salad.
Variations
One of the best things about this recipe is how easy it is to change up the flavors.
Make it creamier. Add a few spoonfuls of cream cheese or a little sour cream to the tomato mixture for a creamier sauce. Stirring in sour cream after baking helps prevent it from separating.
Try a different cheese. Monterey Jack, Colby Jack, or a Mexican cheese blend are all good alternatives to Cheddar.
Add black beans or corn. For a heartier meal, add drained black beans or corn to the tomato mixture before baking.
Use chicken thighs. Boneless, skinless chicken thighs can also work in this recipe. Since they may cook at a different rate than chicken breasts, check their temperature and adjust the cooking time as needed.
Make it low-carb. This recipe is naturally relatively low in carbohydrates when made with plain chicken, taco seasoning, Rotel, and cheese. Check the labels on your seasoning and tomatoes, especially if you’re watching added sugars or carbohydrates.
How to Store Leftovers
Store leftover Rotel Chicken Bake in an airtight container in the refrigerator for up to 3 to 4 days.
To reheat, place the chicken in an oven-safe dish, cover it to help retain moisture, and warm it in a 325°F oven until heated through. You can also reheat individual portions in the microwave in short intervals.
If you’d like to freeze the leftovers, let the chicken cool completely and store it in a freezer-safe container for up to 2 to 3 months for best quality. Thaw it in the refrigerator before reheating.
Frequently Asked Questions
Can I use salsa instead of Rotel?
Yes! Salsa is an easy substitute for Rotel and what the original recipe called for. Choose mild, medium, or hot salsa depending on how much spice you like.
How do I know when the chicken is done?
The chicken is done when the thickest part reaches an internal temperature of 165°F. Cooking time will vary depending on the size and thickness of the chicken breasts.
Can I prepare Rotel Chicken Bake ahead of time?
You can season the chicken and add the Rotel or salsa to the baking dish a few hours ahead of time. Cover and refrigerate it until you’re ready to bake. For food safety, keep the chicken refrigerated and avoid leaving it at room temperature. The baking time may be a little longer if the dish is cold when it goes into the oven.
Is Rotel Chicken Bake spicy?
It has a little heat from the green chilies, but the spice level depends on the variety of Rotel you use. For a milder version, substitute mild salsa or mild tomatoes with green chilies.
Can I use frozen chicken breasts?
It’s best to thaw the chicken breasts in the refrigerator before preparing this recipe. Baking frozen chicken can lead to uneven cooking and makes the original cooking time unreliable.
